To Love a Beast
by Karen Witemeyer
2025
Once adored as the "American Adonis," scarred recluse Everett Griffin hides in a lonely Texas manor, content with his fearsome reputation. When bookbinder’s daughter Callista Rosenfeld arrives to fulfill a contract that will save her family, restoring his library slowly softens his defenses and exposes both of them to a deadly enemy and unexpected love.
Series background & context
Once Upon A Time in Texas takes a single beloved fairy tale and plants it firmly on Texan soil. The series currently centers on To Love a Beast, which reimagines Beauty and the Beast in the late nineteenth century, swapping castles and curses for a remote manor, old wounds, and the harsh judgments of small-town society.
Everett Griffin was once celebrated among New York’s elite as the "American Adonis," a man whose looks opened doors and won admiration. A betrayal leaves him physically scarred and emotionally gutted, driving him far from the city’s glitter into the wilds of Texas. There he cloaks himself in a reputation as a dangerous recluse, content to let rumors of a beastly temper keep curious neighbors at bay. His only companions are loyal servants and an oversized dog who does little to discourage the legends.
Into that self-imposed exile walks Callista Rosenfeld, a bookbinder’s daughter whose family business is on the brink. When an injury to her father threatens to ruin an important contract, Callista volunteers to travel to Everett’s isolated estate and complete the job herself. She is resolute, practical, and unimpressed by bluster, yet she quickly realizes that finishing the work will require both skill and stubbornness.
The heart of the story lies in the slow, awkward dance between these two. Callista is drawn to the magnificent, neglected library she has been hired to restore and to the glimpses of tenderness that slip past Everett’s scowls. He, in turn, is disarmed by a woman who refuses to flinch at his scars or back down from his temper. Their conversations move from guarded barbs to thoughtful exchanges, stitched together by shared love of books and a growing sense that they see in each other what others have missed.
Danger presses in from outside as well. The same forces that once hurt Everett are not finished with him, and Callista’s presence at the manor draws fresh attention. Schemes, jealousies, and an escalating threat test the fragile trust they are building, turning the quiet house into a battleground where courage and sacrifice matter more than appearances.
Although To Love a Beast can be read on its own, it carries the hallmarks readers now expect from Witemeyer’s fairy-tale inspired work: a familiar story reshaped by Texas history, characters grounded in faith, and conflicts that ask whether true beauty has more to do with character than with what anyone sees in a mirror. It offers a full, satisfying romance while hinting that there may be room in this Once Upon A Time in Texas world for more reimagined legends in the future.
